Of course, the breathtaking ambiance in the historic cashiers’ hall of the former bank building is impressive, attracting both tourists and locals to “The Bank Brasserie & Bar” in the heart of the city. However, it quickly became known after its opening in 2016 that the restaurant at Park Hyatt Vienna focuses on reinterpreted brasserie classics using regionally sourced Austrian products of selected quality.

 

This has not changed to this day, as under the Executive Chef since 2023, the award-winning world-class talent Stefan Mörth, who has cooked in Hyatt restaurants from Hamburg to Tokyo, an international, innovative, and modern cuisine is offered, which also includes traditional Austrian dishes. The variably designed menus for lunch or dinner are seasonally updated and changed three times a year. Bestsellers among the brasserie classics have been not only the delicious Viennese Schnitzel for years but also the hand-cut beef tartare with truffle, confit egg yolk, mustard caviar, and potato bread, always popular lobster in various preparations or the unique Rossini burger with beef, truffle, foie gras, spinach, onion relish, and Belgian fries or finally a dessert delicacy from the creative pots and bowls of the Chef Patissier Oliver Ivanschitz and his team: whether the best sour cream shredded pancake of Vienna with hay milk ice cream and a seasonal compote or the new Baked Alaska, a sweet dream of meringue, pineapple, and kaffir lime ice cream – in The Bank Brasserie & Bar, from the worldly gourmet to the pampered sweet tooth, everyone will find something!
